Sunday Brunch: Breakfast Casserole


Good morning! It has been a while since I have shared a Sunday Brunch recipe, but this casserole made with eggs, cheese, bread and sausage is by far the favorite in our house for brunch parties or just your typical lazy Sunday morning! The best part about this recipe is that it is super easy and you can easily change it up by adding in any of your favorite breakfast ingredients.
You will need:



*You can make this vegetarian by nixing the sausage and replacing with some chopped peppers, onions, tomatoes, etc. The recipe tastes best if you prepare it the night before to allow all of the flavors to soak together and then bake it in the morning.

Brown the breakfast sausage in a skillet over medium heat until cooked through. Cut the bread into cubes and bake in the oven at 400 degrees for about 10 minutes or until toasted. While those are cooking, mix together the eggs, cheese, cream, salt and pepper in a large bowl. Once the sausage and bread are done, add them to the bowl and mix all together until the bread is covered with egg mixture. Cover and refrigerate overnight. 

The next morning, pour mixture into a baking dish and bake covered on 350 degrees for about 30-40 minutes or until the casserole is set. Makes about 8-10 servings.
